These fish are called Big Eye, "Ahi" in Hawaiian or "Kihada" in Japanese. The term means ‘fire’ and originates from when islanders harvested Yellowfin from canoes. Big eye is a equatorial migratory fish that has a firm flesh with a mild taste. When cooked, the meat turns a very light yellow/brown. This larger sized fish finds itself common for sushi, and it is a favorite among our customers.
